Chili Goma Soba aka Spicy Sesame Noodles

These noodles are inspired by my very favourite Chili Goma Ramen from a local (amazing) ramen restaurant. I really needed a fix but I didn’t have any of my own 20-hour pork broth kicking around, or any fresh handmade noodles.

BUT!!! I did have an excessive amount of soba noodles in the pantry, loads of sesame paste, and there are at least four kinds of chili oil in my fridge at any given time.

So… this delicious bowl of noodles was born. And omg they are awesome!! Great fiery heat, perfect chewy texture from the soba and the sesame paste gives such a satisfying richness. They make me very happy.

Recipe-ish:

Ingredients

  • 2 Tbsp tahini
  • 1 Tbsp soy sauce
  • 1 tsp rice vinegar
  • 2 tsp chili oil
  • 1 tsp sesame oil
  • Pinch sugar
  • 1 serving soba noodles

Directions

  1. Get some soba noodles cooking in well salted water.
  2. While they cook, whisk together in your bowl the tahini, soy sauce, rice vinegar, chili oil, sesame oil and a pinch of sugar.
  3. When the noodles are cooked, scoop them into your bowl along with a couple Tbsp cooking water and mix well. Top with lots of green onion, sesame seeds and more chili oil.
