Fresh Peach Crisp Cookies

Peach pie is my very favourite pie. Making peach pie is my very least favourite thing. Or any pie really. The risk of not achieving pie perfection is very, very high and I don’t enjoy that kind of pressure. My answer to this almost every time… what if I just make it in cookie form? Almost always works.

These Fresh Peach Crisp Cookies have crisp edges, chewy oats, little pockets of actual fresh peaches, a buttery crumble topping, and the most delicious little almond drizzle. They taste like summer peach crisp, only you can grab one to go and eat it in your car.

And are they no-chill? Obviously. You won’t meet many cookies here that aren’t because if I’m making cookies I want ’em now.

my pro tips for making the best ever fresh peach crisp cookies

Use firm peaches: this is probably the most important tip. You want fresh peach flavour and little juicy pieces throughout the cookies, but extra ripe peaches can release too much moisture and make the dough difficult to work with. Save those gorgeous juicy peaches for eating over the sink which I highly recommend.

Pat the peaches dry: even with firm peaches, give the diced pieces a good pat with paper towel before adding them to the dough.

Don’t skip the crumble: that buttery, cinnamon-y topping is what really makes these a whole “peach crisp in cookie form” thing. A little bit on every cookie is exactly right. Some of it will fall off and that’s no reason to panic… what it is is reason to just go ahead and eat those extra crisp bits. Chef’s treat.

Let them cool before glazing: I know waiting is annoying. But I’ve helped you out by removing chilling time, so you’ll be ok. Just know that the almond glaze will slide right off a warm cookie instead of giving you those pretty little drizzled ribbons.

Fresh Peach Crisp Cookies

All the best parts of a peach crisp, packed into a chewy, no-chill cookie. Crisp edges, chewy oats, fresh peaches, crumble topping and an heavenly almond drizzle.

Ingredients
  

For the Cookies:

  • 1 3/4 cups all-purpose flour
  • 3/4 cup rolled oats
  • 2 Tbsp milk powder
  • 1 tsp sea salt
  • 1 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 cup butter melted and cooled slightly
  • 1/2 cup sugar
  • 3/4 cup packed light brown sugar
  • 2 tsp vanilla extract
  • 1 egg
  • 1 cup finely diced fresh peaches patted dry*

For the Crisp Topping:

  • 1/4 cup quick-cooking oats
  • 2 Tbsp all-purpose flour
  • 2 Tbsp packed brown sugar
  • 1 Tbsp butter melted
  • 1/4 tsp cinnamon
  • Pinch of sea salt

For the Almond Glaze:

  • 1/2 cup powdered sugar
  • 1 Tbsp milk
  • 1/2 tsp vanilla extract
  • 1/4 tsp almond extract
  • Pinch of salt

Instructions
 

Make the cookie dough:

  • In a medium bowl, whisk together the flour, oats, milk powder, salt, cinnamon, baking powder, and baking soda. Set aside.

  • In a large bowl, combine the melted butter, sugar, and brown sugar. Mix well until very light and fluffy.
  • Mix in the vanilla and egg until the mixture is fluffy and well combined.

  • Add in the dry ingredients and the peaches and mix just until combined.

Make the crisp topping:


  • In a small bowl, combine the oats, flour, brown sugar, cinnamon, and salt. Add the melted butter and mix with your fingers or a fork until crumbly.

Bake the cookies:


  • Scoop the dough onto baking sheets**, leaving plenty of room between each cookie.
  • Gently press a little of the crisp topping onto each cookie.

  • Bake at 375°F for 9-11 minutes, or until the edges are lightly golden and the centres still look slightly soft.
  • Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Make the glaze:


  • Whisk together the powdered sugar, milk, vanilla, almond extract, and salt until smooth. Drizzle over the cooled cookies.

Notes

*Use firm peaches here. Extra ripe peaches will be too juicy.
**I use a medium cookie scoop (approximately 3 Tbsp size)

recipe substitutions and variations

The Nectarine Swap: no good peaches? Use finely diced nectarines instead. They absolutely give you the same juicy summer-fruit situation and if I’m honest, I often use firm nectarines in these because their less-juiciness sometimes makes them easier to work with.

The Nutty Upgrade: add a handful of finely chopped toasted pecans to the crumble topping for even more of that classic peach crisp flavour.

The Brown Butter Move: for an extra nutty, buttery cookie, brown the butter before cooling it and using it in the dough. It’s a little more work, but brown butter and peaches are very good friends. You could even swap out the drizzle for my brown butter drizzle here.

The Berry Addition: add a small handful of finely diced fresh raspberries or blueberries along with the peaches for a peach-and-berry crisp situation. Keep the fruit quantity roughly the same so you don’t add too much moisture. Peaches + blueberries = awesomeness.

The Ice Cream Sandwich Situation: you’re going to love me for this… sandwich a scoop of vanilla ice cream between two cookies and freeze until firm. Eat several.

The Coffee Break: these are excellent with a cup of coffee in the afternoon. Or morning. I’m not here to judge your cookie schedule.

The Summer Dessert Move: add them to a dessert platter with fresh or grilled peaches, berries and a bowl of whipped cream. Kind of like peach themed dessert charcuterie board and possibly the perfect summer dinner party dessert.

To Store: Store the cooled cookies in an airtight container at room temperature for a couple of days and then move them to the fridge. Because of the fresh peaches they do soften as they sit and I wouldn’t keep them sitting around for a week although I suspect that won’t be a problem.

Make-Ahead: The cookies are best the day they’re baked, but they’re still delicious the next day. You can also prepare the crisp topping ahead of time and keep it covered in the refrigerator until you’re ready to bake.

The Freezer-Friendly Option: Freeze the baked cookies without the almond glaze for up to 2 months. Thaw at room temperature, then drizzle with fresh glaze before serving.
