I first created this fresh peach salad recipe when I was a teenager. And friends, I’m not gonna lie, that was a while ago… easily more than ten years (wink, wink).
Anyhoo… it’s definitely stood the test of time and it is so delicious. The sweet peaches and spiced cashews go so well together and the curry yogurt dressing is something I can’t get enough of. It’s super yummy.
Most fresh peach recipes are for desserts, so why not mix it up a bit? This will be your new favourite way to eat your peaches. Trust me.
Recipe-ish:
Ingredients
- For the cashews:
- 1 cup raw cashews
- 1 tsp coconut oil
- 2 tsp maple syrup
- 1/2 tsp salt
- 1/4 tsp cumin
- 1/4 tsp chili powder
- Pinch cayenne
- Pinch cinnamon
- Pinch black pepper
- For the salad dressing:
- 2 Tbsp Greek Yogurt
- 1 Tbsp mayo
- 1/2 tsp curry powder
- 1/4 tsp salt
- 1 tsp vinegar
- 2 tsp honey
- For the salad:
- Leafy greens (about 4 cups)
- 1-2 sliced fresh peaches
- 1/4 cup thinly sliced red onion
Directions
- To make the cashews toast them in a skillet and when they’re lightly browned mix together and then add in the coconut oil, maple syrup, salt, cumin, chili powder, cayenne, cinnamon and black pepper.
- Stir and cook 2-3 minutes until the cashews are well coated. Set aside to cool. (You won’t use all the cashews in the salad but they make excellent snacking)
- To make the dressing whisk together the Greek Yogurt, mayo, curry powder, salt, vinegar and honey.
- Add leafy greens to a large bowl. Top with the sliced peaches, red onion and some of the cashews.
- Drizzle with the dressing.
