Frosted Chocolate Chunk Banana Zucchini Cake

How are we feeling about all the summer zucchini recipes these days? Tired of the stuff already? What if I made up a banana zucchini cake recipe, added big chunks of dark chocolate to it and topped it with the fluffiest chocolate frosting ever? Yes? Thought so.

This cake… this is what happens when the zucchinis are growing like wildfire and there are a couple of sad bananas on the counter (I mean that little situation just screams cake to me, but maybe that’s a bit of a problem…). This zucchini cake is so easy to make, is loaded with chocolate and is slathered with the very best fluffy chocolate frosting. Heaven.

Recipe-ish:

Ingredients

  • For the cake:
  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp nutmeg
  • 1/4 cup oil
  • 1/4 cup Greek Yogurt
  • 2 mashed bananas
  • 1 egg
  • 2 tsp vanilla
  • 3/4 cup sugar
  • 1 cup shredded zucchini
  • 1 cup dark chocolate chunks
  • For the frosting:
  • 1/2 cup butter
  • 1 1/2 cups icing sugar
  • 1/2 cup cocoa 
  • 1 tsp vanilla
  • 1/4 cup heavy cream

Directions

  1. Combine the flour, baking powder, baking soda, salt and nutmeg in a bowl and set aside.

  2. Combine the oil, yogurt, bananas, egg, vanilla and sugar in a separate, large bowl.

  3. Mix in the shredded zucchini.

  4. Add in the dry ingredients and mix until just combined.

  5. Fold in the dark chocolate chunks

  6. Pour into an 8×8 greased pan.

  7. Bake at 350 for 35-40 minutes. Let cool.

  8. To make the frosting cream together the butter and the icing sugar in an electric mixer.

  9. Add in the cocoa and mix until smooth.

  10. Add in the vanilla and the heavy cream.

  11. Whip until very fluffy.

     

  12. Frost the cake.
