Garlic Butter Soy Mushroom Soba Noodles

15 Minute Mushroom Soba Noodles. Because I’m currently living in a heat wave and want to spend as little time in the kitchen as possible. Anyone feel me?

How about just 15 minutes of effort that ends in a big bowl of noodley deliciousness with the most amazing caramelized garlicky mushrooms? Yes??? Yessssss!! Same.

So easy, so fast and so much rich flavour that there is no way you’ll be disappointed. These mushroom noodles taste like you put in max effort, but really you just threw them together and got yourself right back to the patio.

Recipe-ish:

Ingredients

  • Soba noodles (I used 3 bundles)
  • For the mushrooms:
  • 3-4 cups chopped Cremini mushrooms
  • 2 Tbsp olive oil
  • 2 Tbsp soy sauce
  • 2 minced garlic cloves
  • For the sauce:
  • 2 Tbsp soy sauce
  • 1 Tbsp Mirin
  • 2 tsp sesame oil
  • 2 tsp chili garlic paste
  • 1 tsp brown sugar
  • 1 Tbsp soft butter
  • For serving:
  • 2 sliced scallions
  • 1 Tbsp sesame seeds

Directions

  1. Toss 3-4 cups chopped Cremini (or any) mushrooms with the olive oil, soy sauce and garlic.
  2. Spread on a baking sheet and roast at 450 degrees for 10 minutes.
  3. To make the sauce whisk together the soy sauce, Mirin, sesame oil, chili garlic paste, brown sugar and butter.
  4. Cook your noodles (I used 3 bundles of soba), drain and toss with the sauce.
  5. Top with the mushrooms, sliced scallions and sesame seeds.
