A summer salad with cherries makes me very happy. Actually, anything with cherries makes me very happy. Cherries are my second favourite fruit and at this time of year I’m eating them in, on and with just about everything.
So when I can fit them into a salad I’m thrilled. And I have to say, salad for dinner is perfect right now because friends, they say we’re in a “heat dome” around here. And if you don’t know what that is… probably don’t ask me because I have no idea. It’s hot. Ok? It’s H-O-T.
Don’t forget, I live in a place where it is not unheard of for it to be minus a zillion degrees in the winter. I am not acclimatized!!!
So, I will likely be living on salads like this until we’re out of the dome, and I’m not upset about it one little bit. This is so good!!
You know I love grains in salads, and brown rice works perfectly. Add in some juicy cherries, creamy feta, salty pistachios and a simple zippy dressing? Perfection.
Recipe-ish:
Ingredients
- For the dressing:
- Juice of half a lime
- 2 tsp honey
- 1/4 tsp sumac
- S&P
- 1 Tbsp olive oil
- For the salad:
- 2 cups baby kale
- 1 cup cooked brown rice (mine is short grain)
- 1 cup halved cherries
- 2 Tbsp crumbled feta
- 2 Tbsp pistachios
- 2 Tbsp chopped fresh mint
Directions
- To make the dressing whisk together the lime juice, honey, sumac, S&P and olive oil.
- For the salad combine in a bowl the kale, rice, cherries, feta, pistachios and mint.
- Mix the dressing with the salad and serve.
