Garlic Parmesan Sweet Potatoes on Yogurt with Chili Crisp & Honey

You have NEVER had sweet potatoes like this before.

(And if you have please don’t tell me because I’m really proud of this one.)

Garlic Parmesan Sweet Potatoes are something I didn’t know I needed in my life and now I just can’t live without ’em.

Crispy roasted sweet potatoes coated with garlic and parmesan cheese piled high on top of thick, creamy Greek yogurt and drizzled with sweet honey and savoury, spicy chili crisp. It is seriously ah-mazing.

Not gonna lie friends, the first time I made this I ate the entire thing standing at the kitchen counter. It probably wasn’t my proudest moment, but I did feel much better about myself than when if I did that with a whole chocolate cake.

I’m pretty picky about sweet potatoes in that I feel they need to be actually crispy and I find that said crispiness is not that easy to achieve. Adding a little cheese to the mix before roasting helps achieve that. Keeping peels on also helps. And helping them out a little at the end with things like sesame seeds, fresh green onion and chili “crisp” also help to bring our sweet potatoes to an even higher level of crispiness.

Ingredients
  

  • 3 small sweet potatoes cut into bite sized pieces
  • 2 Tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/3 cup finely grated parmesan cheese
  • 2/3 cup thick Greek yogurt
  • 1 Tbsp Chili Crisp
  • 2 tsp honey
  • 2 green onions sliced
  • 1 1/2 tsp sesame seeds

Instructions
 

  • Place the sweet potatoes on a baking sheet and toss with the olive oil, garlic powder, parmesan cheese and S&P. Spread out in an even layer.
  • Roast the sweet potatoes at 450 degrees for about 25 minutes, tossing halfway through cooking.
  • Spread the yogurt on a serving dish.
  • Scoop the cooked sweet potatoes on top of the yogurt.
  • Drizzle with chili crisp and honey.
  • Sprinkle with green onion and sesame seeds.

Sweet Potatoes – the regular old orange fleshed guys.

Yogurt – I use a higher-fat, thick Greek yogurt.

Chili Crisp – buy it or make your own.

Parmesan – the real deal is best here. The shaky kind has its place, but it’s not the best here.

So easy that it’s going to become your new favourite lunch. Or stand at the counter alone dinner. Or snack. Or entertaining dish.

Toss your chopped sweet potatoes with some oil, garlic powder, parmesan cheese and S&P. Roast them up at high heat so they get nice and browned and crisp.

Spread a good, thick layer of Greek yogurt on your serving dish. Pile on the roasted sweet potatoes. Drizzle with honey and chili crisp. Sprinkle with green onion and sesame seeds.
