I ate this entire bowl of jicama salad for lunch.
It’s a big bowl.
Then I made it again for dinner and my girls inhaled it too.
It’s just so good.
You might be thinking what is jicama? Or maybe you know what it is but you’re wondering how to eat jicama… or you have one and you’re wondering what to do with jicama… all very good questions. What I can tell you is that it is definitely worth a try. It’s a starchy root vegetable that tastes kind of like a cross between a potato and an apple.
This salad reminds me of the fruit & veggie cups you get from the street vendors in Mexico. So fresh and delicious. Sweet, juicy, tangy, a little heat. Perfect summer food.
A lot of people wonder how to cut jicama. For this salad I used my julienne peeler. I got it from my mother-in-law. It is life changing and you need to go to Amazon and order one right now. Go. I’ll wait.
Recipe-ish:
Ingredients
- 1 medium sized jicama
- 2-3 cups cubed watermelon
- Juice of 1/2 a lime
- 1/2 tsp Ancho Chili Powder
- Pinch of flaky salt
- 1/2 cup chopped Cilantro
Directions
- Peel and julienne the jicama (I used a julienne peeler*).
- Add to a bowl and top with the watermelon.
- Squeeze over lime juice.
- Sprinkle with the Chili Powder.
- Sprinkle with flaky salt.
- Top with cilantro.
