Strawberry Mango Avocado Salad with Cilantro Lime Vinaigrette

I’m starting to wonder if my love of salads is more a love of salad dressings…

I mean, a Strawberry Mango Avocado Salad is a delicious thing in and of itself, but this dressing… I am all about the dressing…

You know what? I’m eating my veggies. All is good. Leave me be.

Let’s start with this dressing… oh, this dressing… it’s dreamy. And so quick and easy to make. You literally throw everything into the blender and boom! Salad dressing. 5 minutes. Want to know how I avoid even more work when I made this? I actually use my immersion blender and blend it all together in a mason jar so leftovers can go straight to the fridge (hint: there will be no leftovers), and so I didn’t have to wash the blender (I loathe washing the blender).

And now this salad… it’s so delicious. Bright and light but still super satisfying and full of flavour. You can mix up the ingredients too. Try different veggies. Add in some nuts or seeds. Swap out the quinoa for a different grain. Tons of options. Just try it. It’s springtime in a bowl.

Ingredients, Substitutions, Tips, etc.

Hot & Spicy or Not Hot & Spicy: Have it your way. If you want a mild salad dressing then make sure you remove the seeds and membranes from the jalapeño. If you want a spicy dressing leave them in. You’re a middle of the road type? I’m going to leave that up to you to experiment.

Cutting the mango: What I’m about to say is controversial. You all know the way everyone tells you to cut a mango… slicing off the “cheeks”, scoring it, folding it inside out and the slicing off the cubes like this. I disagree. I always find that so much mango gets left behind, stuck to the peel. I prefer to peel the mango first, then slice off the cheeks and then cut them up. Yes, it’s a bit slippery, but if you believe in yourself and commit, you can do it.

Strawberry Mango Avocado Salad with Cilantro Lime Vinaigrette

A bright, flavourful salad bursting with colours and textures. Juicy strawberries and mangoes paired with rich, creamy avocado and topped with an easy, blended, cilantro-lime vinaigrette.

Ingredients
  

For the dressing:

  • 1 jalapeño seeded or not chopped*
  • 1 cup loosely packed cilantro
  • 1 Tbsp honey
  • Zest and juice of one lime
  • 1/2 tsp salt
  • 1/4 tsp cumin
  • 1/3 cup avocado oil

For the salad:

  • 1 1/2 cups cooked quinoa
  • 1 cup chopped strawberries
  • 1 cup chopped mango
  • 1 avocado diced
  • 2 Tbsp finely diced red onion
  • 1/2 cup cilantro chopped
  • 1 jalapeño seeded and finely diced
  • 3-4 cups chopped romaine lettuce

Instructions
 

  • For the dressing add the jalapeño, cilantro, honey, lime zest and juice, salt, cumin and avocado oil to a blender. Blend until smooth
  • For the salad, in a large bowl toss together the quinoa, strawberries, mango, avocado, onion, cilantro, jalapeño and romaine.
  • Pour the dressing over the salad and toss well.

Notes

*If you want a mild dressing be sure to remove the seeds and membranes from the jalapeño, if you want it spicy, leave them in.
