This Sushi Wrap with Chicken & Sriracha Slaw is healthy fast food in its tastiest form. I can admit that I go for yumminess first, healthiness second. So, when I find something I’m in love with that’s actually good for me I feel like I must brag about it.

I heard recently that seaweed in its many forms is going to be the next big thing in healthy food trends and I’m not sure how I feel about that. Sushi, yes. Nori, yes. Furikake, yes. Seaweed salad, no (which is exactly why I created my Seaweed Salad without Seaweed). Pasta with seaweed? I just… well… no.
If you have a recipe that you think will fix this problem for me I’d love to hear about it. For now let’s just say I’m trying. I’m working on it. Thank you for your support and understanding friends.

This is so easy it’s kind of silly to explain how to make it because I’m pretty sure you can figure it out. But, if you’re having a rough day and your brain is just not co-operating (me most days), please, allow me…
Mix up your slaw dressing in a bowl. Add in your shredded cabbage and mix it all up.
Lay out your nori sheets, top with the slaw, add shredded chicken, sprinkle with sesame seeds and cilantro, roll, eat. Now, you can see in the pic that these are pretty full and I like them that way because I’m going to eat them immediately, probably standing at the kitchen counter. If you need things a little more neat & tidy you can always divvy up the fillings between four nori sheets instead of two. Plus, then if feels like you get more of them and that is good.

Ingredients, Substitutions, Tips, etc.
Chicken – You don’t have to use chicken in this. Leftover salmon would be great as would shrimp. You could even use canned tuna. To keep it veggie throw in a handful of edamame or crumbled tofu.
Nori – I use standard sized nori wraps, but you can use soy paper wraps or whatever your wrap of choice is.

Sushi Wrap with Chicken & Sriracha Slaw
Ingredients
For the slaw:
- 2 Tbsp Greek Yogurt
- 1 Tbsp mayonnaise
- 2 tsp honey
- 2 tsp Sriracha
- 1 tsp rice vinegar
- 2-3 cups shredded cabbage
For the wraps:
- 2 sheets nori
- 1 cup shredded cooked chicken
- 1 Tbsp toasted sesame seeds
- 1/2 cup cilantro
Instructions
- Make the slaw by whisking together the yogurt, mayo, honey, sriracha and vinegar in a medium bowl.
- Add in the cabbage and toss well.
- Lay the nori sheets flat and divide up the slaw between them (you may not use it all… adjust to taste).**
- Divide the chicken between the sheets.
- Divide and top with the sesame seeds and the cilantro.
- Roll up and eat.
