Sweet Kale Farro Salad with Feta & Bacon

This salad was born out of my deep hatred of washing lettuce and also my strong dislike of chopping up Kale. 

Listen, just because I love to cook doesn’t mean I love everything about it. Dishes, for example. Who needs that??!!

I also want things just how I want them. So sometimes a bagged salad is the way to go… but I just have to make it better! And this is way better! Starting with adding cheese & bacon to it! 
And farro… and a few other pops of flavour… and a much better dressing. So delicious!

Recipe-ish:

Ingredients

  • 1 small bag pre-mixed sweet kale salad
  • 2 cups cooked farro
  • 3 Tbsp pomegranate arils
  • 2 Tbsp finely diced red onion
  • 3 Tbsp crumbled feta
  • 1/4 cup cooked bacon pieces
  • 1/4 cup olive oil
  • 2 Tbsp apple cider vinegar
  • 1 Tbsp honey
  • 2 tsp dijon mustard
  • S&P

Directions

  1. Dump the bag of salad into a large bowl (include the pepitas & cranberries and add some extra of both if you have them)
  2. Add in the farro, pomegranate, onion, feta & bacon
  3. To make the dressing, whisk together the oil, vinegar, honey, dijon and S&P
  4. Toss the dressing with the salad.
