Chicken Salad with Dill Pickles is your new favourite way to eat chicken salad. It’s creamy, tangy, and loaded with pickles. Perfect for lunchboxes, snacks and even a simple grab and go dinner. And who doesn’t love pickles. Well some people don’t but they’re weird.

This is the easy chicken salad recipe that I turn to time and time again because it’s s ridiculously easy to make and just tastes so, so good. Take the chicken salad you know and love, the one you’re used to, and turn the volume up on it. Way up. Pickles add crunch, tang, briny goodness and just take your average chicken salad to a whole new level.

I love chicken salad and my favourite way to eat it is standing at the kitchen counter, container straight out of the fridge sitting in front of me, scooped onto crackers. Yes, it’s messy and not particularly pretty, and I don’t know how normal this procedure is but I know that these days it’s pretty much the only way I eat it and I’m ok with that.

If there are other humans around who I feel might judge me for my chicken salad eating behaviours then I will pile it onto a sandwich… bread, bun, or my fave, a croissant… so that I look like a regular person enjoying chicken salad.

Chicken Salad with Dill Pickles

The most flavourful chicken salad ever. Cooked chicken mixed up with briny dill pickles, onion and a little yogurt. It’s tangy, tasty, and so easy to make.

Ingredients
  

  • 1 1/2 cups cooked chicken chopped or shredded
  • 1/2 cup dill pickles chopped
  • 1/4 cup red onion finely diced
  • 1/4 cup mayo
  • 2 Tbsp Greek yogurt
  • 1 Tbsp pickle juice
  • 1 Tbsp fresh dill chopped
  • S&P

Instructions
 

  • In a bowl combine the chicken, pickles, onion, mayo, yogurt, pickle juice and fresh dill.
  • Stir until well combined.
  • Season with S&P to taste.

Chicken – use any cooked chicken you like… rotisserie chicken, leftover chicken, poached chicken breasts. You can shred the cooked chicken or chop it. I prefer it chopped into fairly small pieces over shredded chicken for chicken salad but you really can’t go wrong.

Pickles – so obviously chicken salad with dill pickles is going to call for… you guessed it… dill pickles. Use whatever your favourite type is… kosher, garlic, no garlic, spicy… again, can’t go wrong.

Onion – I love the flavour of red onion in chicken salad, but white onion works as does green onion, sweet onion or even dried onion flakes.

Mayonnaise and Yogurt – I like the combo of mayo and plain Greek yogurt. Mayo for richness and Greek yogurt for some added tang. If you want to omit the mayo and just use yogurt it will still work well.

Fresh Dill – this is optional, but if you want maximum dill flavour it definitely helps. You can sub in 1/2 tsp dried dill if desired.

Chicken Salad with Dill Pickles Recipe Variations:

Spicy Version – I am always down for spicy dill pickle anything and if that’s your thing too go ahead and add in a big pinch of red pepper flakes and some chopped jalapeños, pepperoncini, or banana peppers.

Many Pickle Version – add in some chopped gherkins and/or a scoop of sweet relish.

Garlic Version – add in a good pinch of garlic powder or a minced clove of garlic.

This is crazy easy which makes it a perfect meal prep recipe if that’s something you like to do. You can even make a double or triple batch and eat it throughout the week.

Take your cooked chicken and shred it or chop it up in to small pieces. Smaller is better here because then you get maximum sauce in every bite. I like to chop it into pieces about 1/4″ square.

Pile the chicken into a good sized bowl so you have lots of space for mixing. Add in chopped dill pickles, red onion, mayonnaise, Greek yogurt, a little pickle juice, fresh dill and a good pinch each of salt and pepper.

Mix it all up really well so everything is evenly combined and coated. Use immediately or store it in the fridge until you’re ready to eat.
