These are pretty much the brownies of my dreams... and I have a lot of dreams about brownies.
Mochi Brownies are easy to make, super chocolatey and very rich and chewy… oh so chewy… And friends, I am all about the chewy. When I crave something sweet it’s always something chewy. Thank goodness I never had fillings in my teeth as a child because I guarantee they’d be long gone by now. Chewy is my love language.
Also, my love of all things Mochi should come as no surprise to you if you’ve followed me for any amount of time… ever since I first tried Hawaiian Butter Mochi I’ve been absolutely obsessed.
My Baked Mochi Donuts? Best donuts ever. My Vanilla Almond Mochi Waffles? If you have not tried these yet I really don’t know what you’ve been doing with your life, but I do know that you’ve been seriously missing out. And hey!! Since I know you have sweet rice flour to make these brownies for dessert tonight I also know you’ll have enough leftover to make the waffles for breakfast. Efficiency is key folks. Anything Special You Need to Know to make the best Mochi Brownies?
*As I do with all my mochi recipes I will remind you once again that you must buy sweet rice flour (often found under the brand name Mochiko) to make these. You can’t substitute regular rice flour because it is not the same thing and you will not create mochi deliciousness if that’s what you use.
*What is mochi? It’s amazing is what it is, but if you need to know more click here.
*It seems like a ridiculous amount of time to bake these compared to regular brownies, but it’s not a typo. It actually takes that long.
*I added dark chocolate to the tops of the brownies, but you could use milk chocolate or white chocolate too.
*Sweet rice flour is gluten free, so if that’s a concern for you, you are safe here my friend.

Recipe-ish…

Chocolate Mochi Brownies
Ingredients
- 1 cup sweet rice flour
- 1 cup cane sugar
- 1/2 cup cocoa
- 1 1/2 tsp baking soda
- 1/2 tsp sea salt
- 1/3 cup melted butter
- 2 eggs
- 1/2 tsp instant espresso powder
- 1 tsp vanilla
- 1 cup milk
- 1/2 cup cream
- 1/2 cup finely chopped dark chocolate
Instructions
- In a bowl combine the flour, sugar, cocoa, baking soda and salt. Mix well.
- In a separate bowl whisk together the butter, eggs, espresso powder, vanilla, milk and cream until well combined.
- Add the butter mixture to the flour mixture and whisk well.
- Pour the batter into an 8×8 greased or lined pan.
- Sprinkle with the dark chocolate.
- Bake at 350 for about 70 minutes.
