I’m literally sitting here right now typing this with one hand so I can work on eating my third handful of the day. So when I say they’re addictive, you better believe it.

I’ve been buying Everything seasoned nuts at my grocery store for a while now and enjoying them, but they never seem to be quite perfect. Satisfying, yes, but never quite what I want them to be. But now, with this recipe, they are… *pats self on back*… they are perfect.

I’m eating them by the handful. I’m putting them in salads (coming soon). I’m considering adding them to a dessert but questioning my own judgement on that one. They’re just that good.

I wanted these cashews to have a slightly crisp exterior and I wanted the Everything seasoning to actually stick to the nuts instead of just falling to the bottom of the bowl as it does with the ones I buy. Enter the humble, yet powerful, egg white. Whipping up an egg white to a frothy state before tossing in the nuts achieves both of these things. The egg white gives the nuts a little extra crunch, which creates the perfect shell-like exterior for the soft, buttery cashews. The egg white also ensures that the seasoning stays put, which is what we want it to do.

So, we froth up an egg white with a whisk, toss in raw cashews and mix well, then add in a good amount of Everything seasoning and a little bit of sugar. The sugar is magic. Cashews are a little sweet by nature, but a tiny bit of extra sugar just amplifies that and creates the perfect flavour.

Once everything is uniformly mixed we’ll roast the nuts. Carefully. Without burning them yes? 😉

Then we’ll let them cool and then we’ll eat them nonstop until they’re gone and then we’ll make another batch. You’ll see.

Everything Bagel Seasoning – you really can find this stuff everywhere these days, but if you’re stuck in the middle of the Antarctic or Siberia and can’t get yourself to a supermarket then you can always make your own (here’s how).

Cashews – we are going to season these nuts well and roast them, so you want to start with unsalted, unroasted, raw cashews.

Sugar – it seems like a really small, almost unnecessary amount of sugar, but the little bit of added sweetness really makes these. Trust.

Burning Nuts – nuts go from rich, toasty golden to charcoal in about 0.000002 seconds. So watch them closely.

Everything Bagel Cashews

Savoury, salty and even a touch sweet, these Everything Seasoned Cashews are crisp, delicious and downright addictive.

Ingredients
  

  • 3 cups raw cashews
  • 1 egg white
  • 2 Tbsp Everything Bagel seasoning
  • 1/2 tsp sugar

Instructions
 

  • In a large bowl whisk the egg white until frothy.
  • Add in the cashews, seasoning and sugar. Mix well..
  • Spread evenly on parchment lined baking sheet.
  • Bake at 300 for 20-30 minutes, stirring halfway through and watching closely so they don’t burn.
  • Allow to cool completely.

  1. The egg white is the key! We’ve tried other recipes that called for olive oil but a;ways end up with a pile of seasoning in the bottom of the container. The seasoning actually sticks to these! I’ve found that 4 cups of nuts achieves the same results with a single egg and 2T of seasoning. I’m currently trying this recipe with Costco’s Extra Fancy Mixed Nuts (unsalted) and expect the same amazing results when they come out of the oven.

    Thanks for posting this recipe. I went looking for a copycat recipe for the same cashews they sell at Aldi. I added a heaping half teaspoon of house seasoning with salt, pepper, onion and garlic powders. Next time I’ll add a pinch more onion, for sure. Maybe garlic too; we’ll see.

    This is a good recipe. I’ve made it several times and we really liked them. I made them again yesterday but added two cracks of salt and two cracks of pepper and this really took them up a notch. The added sea salt and pepper really balanced the flavors but especially the sweetness. It did not make them salty at all but balanced. My family of five nearly ate an entire jar they were so good.

    I’ve also tried this recipe with walnuts and they were also good. They are not my favorite like cashews but this recipe it solid and works on so many things.
