Why isn’t Dill Pickle Pizza more of a thing? Seriously. Why can’t I call up every single pizza joint in the book and order a Dill Pickle Pizza? Someday this dream will be reality but…

Until that day, I guess I’ll just keep on making my own and because it’s so darn good I’m pretty ok with it. Imagine perfect pizza dough topped with a rich and creamy white garlic pizza sauce, mounds of gooey cheese and piles of tangy, briny dill pickles. It’s crazy good.

I know pickles are not pepperoni and I know this whole pickles on pizza idea might divide the room because the truth is that there are some weirdos people out there who actually don’t like pickles. At all. It’s kind of like hearing someone doesn’t like chocolate isn’t it? It just doesn’t make sense.

I mean, I recognize that I’m a little pickle crazy (egg salad with dill pickleschicken salad with dill picklesdill pickle vodka even?) and I’m not saying you have to put them in absolutely everything like I do, but to just plain not like them? Unfathomable.

And putting them on a pizza… amazing friends. You must try it. I like it topped with a little hot sauce, and bonus points if you add a good drizzle of ranch dressing on top too.

Dill Pickle Pizza

A cheesy white pizza topped with a creamy garlic sauce, loads of gooey cheese and zippy dill pickles.

Ingredients
  

For the sauce:

  • 2 Tbsp butter
  • 1 garlic clove minced
  • 1 Tbsp flour
  • 1 cup heavy cream
  • 2 Tbsp sour cream
  • 1/4 tsp onion powder
  • S&P

For the pizza:

  • 1 lb pizza dough
  • 3 dill pickles thinly sliced
  • 2 cups grated mozzarella
  • 1/3 cup Parmesan finely grated

To serve:

  • Fresh dill chopped
  • Red pepper flakes and/or hot sauce

Instructions
 

Make the sauce:

  • Melt the butter in a small skillet over medium-high heat.
  • Add in the garlic and cook for one minute.
  • Add in the flour and cook, stirring constantly, for 2-3 minutes.
  • Slowly pour in the heavy cream. Bring to a simmer and cook until thickened.
  • Remove from the heat and stir in the sour cream and onion powder.
  • Season to taste with S&P. Set aside to cool slightly.

Make the pizza:

  • Heat the oven to 450 degrees.
  • If using a pizza stone, place it in the oven.
  • Roll out the the pizza dough to form whatever shape and thickness you desire.
  • Spread the sauce evenly over the dough.
  • Top with some of the pickle slices.
  • Evenly top with the mozzarella and the Parmesan cheese.
  • Add another layer of pickles.
  • Bake the pizza for 10-15 minutes.
  • Serve with fresh dill and red pepper flakes or hot sauce for topping.

Pizza Dough – use your favourite homemade pizza dough or use store bought to keep this quick and easy.

Dill Pickles – obviously. Whatever your favourite pickles are.

Mozzarella – the low moisture pizza mozzarella is best.

Parmesan Cheese – a little Parm really amps up the flavours.

Fresh Dill – tastes great as a garnish on the finished pizza. You can use a little dried dill too if you have it.

Spicy Version – add a good pinch of cayenne into the sauce with the salt and pepper and sprinkle the top of the pizza with red pepper flakes and freshly ground black pepper before baking.

Salt Lovers Version – add 1/2 cup crumbled feta cheese and some sliced black olives to the toppings.

Extra Pickles Version – add a bunch of sliced pickled jalapeños along with the pickles.

First, make the white garlic pizza sauce. Melt some butter in a small skillet and once it’s hot toss in the garlic and let it cook for about a minute (until it smells amazing!). Whisk in the flour and keep it moving for 2-3 minutes, so it doesn’t stick or burn.

Now, pour in the heavy cream while stirring constantly. Let it come to a simmer and cook until it thickens up and becomes all luscious and dreamy! Once it’s nice and creamy, take it off the heat and stir in some sour cream and onion powder. Give it a good pinch of salt and pepper to taste and then set it aside while you prep the pizza. You can even do this a day or two in advance to save time.

Crank your oven up high, and if you’re using a pizza stone, go ahead and pop it in there to heat up.

Roll out your pizza dough into whatever shape and thickness you’re feeling today—round, square, rustic… no judgment here! Spread that dreamy garlic pizza sauce evenly over the dough.

Next, lay down some pickle slices (yes, we’re doing double pickles—trust). Top with a generous amount of mozzarella and Parmesan. Add another layer of pickles on top because, why not?
