Strawberry Chocolate Cookies – the perfect combination of rich, chocolate and juicy, sweet, slightly tart strawberries.

These ones are for the chocolate lovers, the berry lovers, the cookie lovers… these are the cookies I bake when I want something incredibly rich and chocolately but a little fruity. The strawberries brighten things up a little without subtracting from the experience of total decadence.

They’re truly bakery worthy with crisp, crackly edges and chewy, fudgy centres.

Fresh Strawberry Chocolate Cookies

I have a thing with cookies and that thing is that I like to take other desserts I love and turn them into cookies… which makes this the perfect time to mention my Banana Cream Pie Cookies, Rice Krispie Treat Cookies and Strawberry Cheesecake Cookies.

I do this because I make so many cookies that I could probably whip up a batch in my sleep and so transforming beloved desserts that take time and effort to make into quick and easy cookies that make me just as happy is kind of genius if i do say so.

These delicious bites are my cookie version of those irresistible frozen chocolate covered strawberries that cost. more. than. my. life. and that my daughter begs for every time we go to Costco and I keep refusing to buy. Stay strong moms. Don’t buy them. Make these.

Strawberry Chocolate Cookies

Rich, chewy and packed with triple chocolate flavour and juicy bites of real strawberries. Your favourite chocolate covered strawberry in decadent cookie form!

Ingredients
  

For the cookies:

  • 1/2 cup butter softened
  • 1 cup brown sugar packed
  • 1 egg
  • 2 tsp vanilla
  • 1 1/4 cups flour
  • 1/3 cup cocoa powder
  • 2 Tbsp milk powder
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup strawberries finely chopped
  • 3/4 cup milk chocolate chips
  • 3/4 cup white chocolate chips

For the drizzles:

  • 1 cup powdered sugar
  • 1 Tbsp freeze dried strawberry powder
  • 1-2 Tbsp milk
  • 1/4 cup milk chocolate chips

Instructions
 

Make the cookies:

  • Cream the butter and sugar with an electric mixer for several minutes until well creamed, light and fluffy.
  • Add in the egg and the vanilla and mix for 2-3 minutes more.
  • In a separate bowl combine the flour, cocoa, milk powder, baking soda, baking powder and salt. Mix well.
  • Add the flour mixture, the strawberries and the chocolate chips into the butter mixture and mix until just combined.
  • Allow the cookies to cool completely and then top with the drizzles, if desired.

Make the drizzles:

  • Melt the milk chocolate chips in the microwave. Set aside.
  • In a bowl combine the powdered sugar, strawberry powder and milk. Whisk until completely smooth.
  • Add more milk if it’s too thick.
  • Use a spoon to drizzle the cookies.

Notes

Feel free to sub in dark chocolate chunks or semi-sweet chocolate chips.

Strawberries – we are using fresh strawberries here for their juicy, sweet-tart pop and I think that’s key. Sometimes fresh is best (like in these Strawberry Scones or Vanilla Cake with Fresh Strawberry Filling). I actually wouldn’t recommend frozen strawberries because the berries lose a lot of moisture in the thawing and your cookies may turn out soggy.

Cocoa – I use rich, dark, dutch processed cocoa powder.

Brown Sugar – I like the dark brown sugar, but light works too.

Milk Chocolate – we’re using milk chocolate chips to hit that Tru Fru vibe we’re going for, but you can also use dark chocolate chips or chocolate chunks if you prefer.

White Chocolate – I adore the combo of white chocolate and berries so for me this add is a must, but you can leave it out if you like.

Freeze Dried Strawberry Powder – this is for the drizzle. Mixing a little strawberry powder in our drizzle gives an extra hit of strawberry flavour.

Storing – I keep these covered or in an air tight container at room temperature for 1-2 days and after that I refrigerate them to keep the strawberries fresh. They freeze well too, just freeze in a single layer until solid and then you can transfer to a freezer bag if you like.

Strawberry Chocolate Cookies Recipe Variations:

Almond Version – I love to add 1/2 cup of slivered or flaked almonds to the batter along with the chocolate chips. When I make this version I also add in a splash of almond extract along with the vanilla.

Marshmallow Version – as soon as the cookies come out of the oven it’s fun to add a few mini marshmallows to the top of each cookie.

Start by creaming the butter and sugar together for a good 5-6 minutes until super light and fluffy. I’ve said it before and I’ll say it again – don’t skip this step, it keeps your cookies from spreading too much.

Crack in the egg and the vanilla extract (measure with your spoon or with your heart) and continue mixing for a couple minutes more.

Next combine the flour, cocoa powder, milk powder, baking soda, baking powder, and salt. Whisk it all well until completely combined.

Add the dry mixture into the butter mixture along with the chopped strawberries, milk chocolate chips and white chocolate chips and mix just until everything’s combined. Go ahead and add it in all at once to prevent over mixing.

I like to use a cookie scoop to make the dough balls and add them to the baking sheet – you can line with parchment if you like, but you don’t have to, just know that the fresh berries can stick a little sometimes. Bake the cookies and allow to cool completely before drizzling, if you’re drizzling. If you feel the need to taste for quality control here that’s ok.

Make the drizzles if you like and top with as much or as little as you like.

My pro-tip: if you want to make these ahead, go ahead and freeze some (or all) of the cookie dough balls to bake later. You can bake them straight from the freezer, just adding a minute or two to the baking time.
