If you ever feel like you’d like to know just how many flavours of baking chips are available in the world there’s no need to go to the store. Just come to my house. At any given time I have at least 432 types of baking chips available for use. There are probably eight different varieties of chocolate chips alone and then we have peanut butter, butterscotch, mint, yogurt, hearts, unicorn (yes, unicorn), and now these… one of the greatest inventions of our time… cream cheese baking chips!! Have you ever heard anything so exciting? Yes, of course you have. Nobody else in the world gets as excited as me about such things. I am not sorry. So you can understand that when I found them I knew they’d be the perfect thing for cheesecake cookies! I was not wrong.

This super easy cookie recipe does not require you to let the dough rest or to leave it overnight to chill (because nobody wants that). The creaming is important and beyond that they are an absolute breeze. Here’s how to make them…
Step 1: cream the butter and the sugars until really light and fluffy. No cheating. Let that mixer mix for a good 7-8 minutes.
Step 2: add in the egg and vanilla and mix well.
Step 3: mix up the flour, baking soda, baking powder and salt and fold it into the butter mixture along with some finely diced strawberries, chopped up graham crackers and the cream cheese baking chips.

Ingredients, Substitutions, Tips, etc.
Strawberries – fresh strawberries are used in this recipe, not freeze dried, so they’re best made when good berries are in season. We’ll cut them small, but you’ll be surprised how the flavour spreads through the whole cookie.
Cream Cheese Baking Chips – these are pretty readily available now, but if you can’t find them you can sub in yogurt chips or even white chocolate chips.
Graham Crackers – just break them up with your hands into small pieces, they crumble pretty easily. I just dump the crumbs into the batter too.
Butter – I use salted butter pretty much always, so if you use unsalted you may need to bump up the added salt a wee bit.

Strawberry Cheesecake Cookies
Ingredients
- 2 cups flour
- 2 Tbsp milk powder
- 1/2 tsp sea salt
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1 cup melted butter cooled
- 1/2 cup sugar
- 3/4 cup packed light brown sugar
- 2 tsp vanilla
- 1 egg
- 1/3 cup fresh strawberries diced small
- 1/2 cup cream cheese baking chips*
- 1/2 cup graham crackers chopped small
Instructions
- In an electric mixer combine the butter, sugar and brown sugar. Mix on medium speed for several minutes, until light and fluffy.
- Add in the vanilla extract and the egg. Mix well again.
- In a separate bowl mix together the flour, milk powder, salt, baking powder and baking soda.
- Add the dry ingredients, strawberries, baking chips and graham crackers into the butter mixture and mix until just combined.
- Bake at 375 for 9-11 minutes.
